Pumpkin-Purée Box Brownies

Batch size: Made with one full box of mix, so this recipe makes one batch.

• 1 box Simple Mills Almond Flour Brownie Mix
• 1 cup (240 g) pumpkin purée
• 2 eggs
• 2-4 tbsp water if needed
• Optional Just Date chocolate chips (handful in method, extras on top)
• Optional flaky sea salt

Method

1. Preheat oven to temperature on mix box.
2. Combine ingredients and fold in chocolate chips. Add water as needed for consistency.
3. Transfer to lined 8 x 8-inch pan; add extra chips.
4. Bake following box directions until a toothpick has a few moist crumbs. Cool fully before slicing.
5. Optional serving: warm a portion 10-15 seconds and serve with Greek yogurt or milk.
